Rum-soaked grilled pineapple
This recipe is from EVO Grills.

1/2 C dark rum

1/2 C brown sugar

1 tsp. cinnamon

1 pineapple, peeled, cored and sliced

vanilla ice cream

Directions

Mix rum, sugar, cinnamon.

Lay out pineapple rings on a baking sheet.

Pour rum mixture over rings and toss to coat them. Allow to set for at least 15 min.

Remove rings onto a plate and place the rum mixture in a saucepan.

Heat the sauce to a simmer for 6 to 8 minutes. Set aside.

Heat EVO to medium heat. Place pineapple on EVO and cook for 1 to 2 minutes on each side until brown. Remove for serving.

Top each pineapple ring with a scoop of ice cream and drizzle with rum sauce.

Serve immediately.
